Este dulce, uno de los más antiguos de Navidad, tiene un origen pagano. El Imperio Romano celebraba la llegada del año nuevo el 1 de marzo. Los romanos atendían a las leyes del tiempo, porque al llegar la primavera desbordaban de vida árboles y plantas, y la luz aumentaba, lo que hacía creer que comenzaba un nuevo ciclo anual. En aquellos tiempos, desde mediados de diciembre a finales de marzo tenían lugar las fiestas de invierno, durante las cuales Roma celebraba la protección de sus dioses.Años más tarde la Iglesia logró cristianizar esas fiestas paganas superponiendo la fecha del nacimiento de Cristo al solsticio de invierno. Con motivo de aquellas fiestas se elaboraban unas tortas redondas hechas con higos, dátiles y miel que se repartían entre plebeyos y esclavos. En su interior se introducía una haba seca y al afortunado al que tocaba la legumbre era nombrado rey de reyes durante un corto periodo de tiempo.
Hacia el año 1000 la Iglesia había logrado transformar el espíritu primitivo de la fiesta de tal modo que en diversos lugares de Francia la figura del "rey haba" recaía sobre el niño más pobre de la ciudad. Felipe V importó en España esta tradición del rosco como culminación de las fiestas de Navidad. El pastel que se hace en nuestros países tiene forma de rosca, más o menos imitando una corona real, cubierto de frutas escarchadas, que semejan las joyas de la corona, y tiene escondida en su interior una pequeña sorpresa, antiguamente podía ser de gran lujo y valor.
La tradición dice que quién encuentra la sorpresa tiene que pagar el roscón puede que por influjo francés haya cambiado el sentido y ahora se le hace rey de la fiesta o, en otros casos, se dice que el que encuentra la sorpresa tendrá suerte el año siguiente.
